I have a great one that my wife the chef and I cobbled together one day.  Butterfly the pork (slice in the center so that you can "spread" it into a shape like butterfly wings), then fill in the cut with blackberry jam and dehydrated and grated parmesan cheese.  We used Kraft at the time and have a preference for their formula.  Then, put some paprika on the outer sides and pan fry to preference.  I quite liked the outcome and so did the wife!

My other recipe involves marinating the pork in white vinegar and then rubbing some lemon pepper onto it for a very flavorful set of pork chops.
