Power breakfast: Egg scramble

I've been doing this in various flavors over the past couple of months. This is what I did today. Great way to start the morning and fuel up before a workout.

  • 1.5 Tbl Coconut oil
  • 1/4 cup diced red bell pepper
  • 1/2 cup broccoli florets
  • 1 cup kale torn into bite-sized pieces
  • 1/3 lb. lean ground beef or turkey
  • 1/4 tsp dried oregano
  • 4 eggs beaten
  • salt and pepper to taste

Steam broccoli for 2 minutes and set aside.

Melt coconut oil in pan and add ground meat to pan, break up and brown. Just before meat completely browns add oregano, bell pepper and kale and cook until kale wilts, about 3 minutes.

Add steamed broccoli salt and pepper and heat through for about 1 minute then add eggs, scramble, plate and dig in.

Sounds excellent.

Been reading a lot of good things about coconut oil lately, too.

Sounds tasty except for the coconut oil.  I don't like coconut. Is there a substitute?

Butter , olive oil or bacon grease.

But honestly the coconut oil doesn't have much of a taste. You probably wouldn't even notice.

Thanks for the recipe, dude! I am eating only eggs for breakfast because I am working out almost every day. 1 day eggs, 1 day oatmeal.
